Epazote Kitchen & Cocktails, the new dining concept at Hilton Tucson El Conquistador Golf & Tennis Resort, is hosting a series of specialty dining events highlighting a local purveyor of fine food or wine. 

The second specialty dinner, scheduled for April 17, will feature the noted Dos Cabezas WineWorks.

Guests of this dinner will be able to enjoy four prix-fixed courses of locally-sourced specialties each paired with a wine from Dos Cabezas WineWorks.  The tasting menu features a first course of chilled chayote soup with a corn and Manchego hush puppy and citrus apple crema complimented by Dos Cabezas – Pink a lively and tart wine blend of Garnacha and Monastrell grapes. 

For the second course, guests will enjoy a lump crab and heirloom tomato stack paired with Dos Cabezas – Meskeoli, a unique blend of all seven of the white grapes grown at the Cimarron vineyard. The main will treat guests to garden herb crusted Berkshire pork tenderloin with whipped yellow beets, lemonwood smoked parmesan tuile and prickly pear gastrique that will pair well with Dos Cabezas – Red, a mostly Grenache wine that offers crystalline red fruits on the nose and in the mouth.

For dessert, the chef will offer an apricot chocolate torte with raspberry chocolate cream and citrus wafer apricot glaze offered with Dos Cabezas – Boxcar, a dessert wine created from a blend of grapes that is uniquely Arizona. Boxcar offers a velvety rich texture on the tongue with hints of powdered cocoa and boysenberry.

Winemakers from the family-owned Dos Cabezas WineWorks will be present at the event to welcome guests and offer their wine suggestions as well as share stories about running a winery that challenges the perception that Arizona does not produce exceptional wines. Dos Cabezas WineWorks has been producing wines in Arizona since 1995. Since that time the winery was moved to Sonoita, Arizona, close to the vineyard the family planted in 2003.

The featured tasting menu with wine pairings is priced at $49 per person.
