If you’ve ever wondered how some chefs manage to transform raw fish into art, the beginners’ sushi class at Benihana may be just your thing.

The restaurant offers personal instruction in making three challenging variations of sushi: California rolls, shrimp tempura hand rolls and spicy tuna hand rolls. Class takes place at the sushi bar and comes at the cost of $30 a person, which includes a meal of miso soup, salad, fried rice, a dinner of salmon, steak or chicken, dessert, and, of course, sushi. Parties of four or more are accepted, but the ideal number is 10 to 15.

During class, Benihana sushi chefs show participants how to work with rice, shrimp tempura, ahi tuna, sesame seeds, crab meat, avocado, cucumber, nori seaweed, green leaf, yamagobo and soy bean paper. Students prepare and roll ingredients with their own hands.

Those wishing to take Sushi 101 must call at least three days in advance.
