Salmon is one of the most delicious and nutritious foods readily available in supermarkets.

It is low in calories and contains good-for-you omega-3 fatty acids. Even folks who do not normally like fish will often eat salmon. Scientific tests have shown that eating a fatty fish such as salmon could help prevent sudden heart attacks.

The following two recipes are quick and easy to prepare and guaranteed to please.


Servings: 6

Ginger-orange butter ingredients:

Half cup butter, softened

1 tablespoon fresh ginger, grated

Zest and juice of one orange


Cream together the butter, ginger, orange zest and orange juice, either in a food processor or by hand.

Place in refrigerator until needed.

Salmon ingredients:

1 and a half pounds salmon fillet

1 tablespoon olive oil

 Salt and pepper to taste


Remove skin from salmon by using a sharp knife angled almost parallel

to skin.

Slice salmon into half-inch-thick slices, starting at the thicker end.

Line a baking sheet with foil or parchment paper. Brush with olive oil and season with salt and pepper.

Broil salmon for about five minutes or until juices rise to the surface. It is not necessary to turn the salmon.

Top each piece with a dab of ginger butter.


Servings: 6

Orange glaze ingredients:

Half cup orange marmalade

3 tablespoons orange juice, preferably fresh

Half teaspoon fresh ginger, finely grated (optional)

2 teaspoons olive oil


Combine all above ingredients

Set aside

Salmon ingredients:

1 and one half pounds salmon fillet

1 tablespoon olive oil

Salt and pepper to taste


Remove skin from salmon by using a sharp knife angled almost parallel to skin.

Cut into six portions.                      

Place fillets on a baking tray lined with foil or parchment paper.

Season with salt and pepper.                 

Whisk the marmalade glaze and brush each side of each fillet with the glaze.

Broil each side for about four minutes, or until done.

Serve with cooked spinach and brown rice for a delicious and wholesome meal.
