New Chipotle scheduled to open Friday

A seventh Tucson Chipotle is scheduled to open Friday, Jan. 22, at the Casas Adobes Shopping Center on West Ina Road.

The business is hosting a fund-raiser for Cross Middle School's parent-teacher organization on Thursday, Jan. 21 from 5 to 8 p.m. During the fund-raiser, 100 percent of proceeds go to the PTO, which plans to use the funds support Cross' technology needs, honors events and programs.

The first 100 customers to purchase a burrito after 3 p.m. Friday receive a free T-shirt and a free burrito card they can bring back to use anytime following opening day.

Cupcake store opens at La Encantada

Mini's, a specialty cupcake boutique, has opened its doors at La Encantada.

"I have been working on cupcake recipes for over 40 years and I've got it down," said Jaynie Rossi, owner of Mini's. "We are thrilled to be opening our cupcake boutique at La Encantada and share these mouthwatering goodies with all of our friends here in Tucson."

In addition to cupcakes, Mini's also serves its own blend of certified organic and fair trade coffee produced by locally owned Adventures in Coffee.

Mini's is located at 2905 East Skyline Drive. The phone number is 299-2605.
